Rosso di Montalcino DOC 2021 Pian dell'Orino

Pian dell'Orino's Rosso di Montalcino comes from the same biodynamic vineyards as their Brunello, two small plots next to Greppo dei Biondi Santi: Pian dell'Orino at 480 meters on galestro and grey clay, and the central part of Pian Bassolino on sandy marl rich in iron. Caroline Pobitzer and Jan Erbach, a South Tyrolean-German couple who arrived in Montalcino in 1997, treat it with the same care they reserve for their Brunello: manual selection berry by berry on the sorting table, spontaneous fermentation without added sulphites, long maceration periods, and aging for over two years in 25 hectolitre large oak barrels before unfiltered bottling. The result is a fresh and juicy Sangiovese that tells the story of the Montalcino terroir with the precision of a Brunello, but with the immediate drinkability of a table red. A Rosso that has the same soul as the house's Brunello, in a younger and more direct version.

Vinificazione

100% Sangiovese from the Pian dell'Orino (480m, galestro and clay) and Pian Bassolino central section (320-370m, sandy marl rich in iron) vineyards. Manual harvest, berry-by-berry selection on the sorting table. Short pre-fermentative maceration, spontaneous fermentation with indigenous yeasts at controlled temperature, long post-fermentative maceration. Aged for over two years in large 25-hectoliter oak barrels. Bottled without filtration, without added sulfites during winemaking.

Profumo

Clean nose of fresh cherry, raspberry, wild strawberry, violet, an herbaceous note of rosemary and thyme reminiscent of Mediterranean garrigue. Immediate and bright profile.

Gusto

Juicy and incisive on the palate, with very fine tannins, vibrant acidity and a mineral salinity that is the signature of the house. A surprising drink for a Sangiovese of this level, with a linearity rare for the appellation.

Pasta with wild boar ragu, pici with meat sauce, Florentine steak, hunter's style chicken, medium-aged Tuscan pecorino cheese.
