Rosso dei Baroni is Saccomani's most structured and ambitious wine: traditional Piacenza red grapes, long maceration for at least 15 days in concrete vats, then 18 months in concrete and regenerated French oak barriques. This process is designed to build depth without losing the character of the territory — the concrete preserves the fruit and the clayey minerality of the Diolo soil, while the wood adds structure and complexity without dominating. The Vino da Tavola denomination is not a demotion but a choice of freedom: to step outside the DOC to freely express the blend of native Piacenza grape varieties that Saccomani believes is most faithful to these hills.
