Pignoletto Frizzante on the Yeasts 2022 Orsi San Vito
The Pignoletto Frizzante Sui Lieviti di Orsi Vigneto San Vito is produced from the grapes of the white berry variety that symbolizes the Bolognese hills. The base wine obtained from Pignoletto grapes ferments thanks to indigenous yeasts. Subsequently, the wine is bottled with an addition of must from Albana and Riesling grapes, to undergo the second fermentation. No disgorgement is performed, so the wine appears naturally cloudy due to the yeasts that preserve its longevity. The wine can be served without shaking the bottle, decanted if you wish to separate it from the yeasts present at the bottom, or gently agitated before uncorking to appreciate all its particular nuances.

Spontaneous fermentation with indigenous yeasts in steel, without fining or filtration. Refermentation in the bottle is achieved by adding 3% Albana and Riesling must, which occurs spontaneously with the arrival of the first spring warmth. Never disgorged: the yeasts remain in the bottle, where they continue to safeguard its vitality and longevity. |
