Delicate destemming without crushing. Depending on the vintage, up to 30% whole clusters are used for 10-15 days during maceration. Spontaneous fermentation in concrete tanks of 15 to 40 hl. Aging in concrete and 20-40 hl oak barrels for 12 months. |
