Composed of old varieties typically from the Aosta Valley, namely 60% Vien de Nus, 25% Petit Rouge and 15% Vuillermin grown in young vineyards located in Jovencan and Gressan. The harvest takes place when fully ripe, generally during the period of October, always manually in small crates, the grapes are destemmed and pressed and left to ferment with their skins for 15 days. After racking, the wine is left to refine in stainless steel barrels for at least 12 months, with racking only when necessary. Before being put on sale, the wine rests 4 months in the bottle.
