Gutturnio DOC Sparkling Red 2023 Saccomani
Gutturnio is the symbolic red wine of the Piacenza Hills, born from the union of Barbera and Croatina — the two historic grape varieties of these hills, complementary by nature: Barbera brings acidity, structure, and color; Croatina adds softness, body, and that slight tannicity that gives the wine its rustic and gastronomic character. Saccomani vinifies it as always: maceration on the skins for about 8 days with indigenous yeasts, spontaneous fermentation on the clayey and silty soils of Diolo, then natural refermentation in the bottle in spring without selected yeasts or additives. The result is a dry, sparkling red that brings all the frank character of the Piacenza tradition to the glass — crisp fruit, lively bubbles, immediate savoriness — with that slight sediment at the bottom which is a guarantee of authenticity.

Vinificazione |
Spontaneous fermentation with indigenous yeasts, skin maceration for approximately 8 days. Aging on fine lees. In spring, natural refermentation in the bottle without the addition of selected yeasts or additives. |
Profumo |
The nose is fruity and direct: fresh cherry, blackberry, violet, a spicy and earthy touch reminiscent of clay soil. |
Gusto |
On the palate it is dry, fresh and savory: tannins are present but soft, the Barbera's acidity is well balanced by the roundness of the Croatina, and the bubbles lighten and make for a smooth drink. The finish is clean and persistent. |
Abbinamento |
Piacenza cured meats (coppa, pancetta, salame), aged cheeses, pisarei e fasò, ricotta tortelli, red meats, traditional Piacenza pasta dishes. |
