Fossivento Chianti Classico DOCG 2021 Chioccioli Altadonna
Fossivento is named after the winds that blow through the hills of the Sienese Chianti region, and it carries all the energy of a territory that Niccolò Chioccioli Altadonna has known since childhood. It is the most direct and territorial Chianti Classico in the range: predominantly Sangiovese, with a small percentage of Syrah, a grape variety that has found a second home in Tuscany and here adds depth without detracting from its identity. The name is also an implicit homage to Cecco Angiolieri, the medieval Sienese poet who sang of his anger against the world: "If I were the wind, I would storm it." But Fossivento does not have the poet's anger: it has his same vitality, his frankness, that ability to speak forcefully without losing elegance. Very low yields, around 35 hectoliters per hectare, and a winemaking process that combines the tradition of steel with the experimentation of amphorae: half of the must ferments in Impruneta terracotta, half in steel, then everything converges in a long aging in old barriques where the wood imparts structure without imparting flavor.

The grapes are cooled overnight and selected on a double sorting table before entering the cellar. Spontaneous fermentation with indigenous yeasts: half of the mass in terracotta amphorae, half in small steel tanks. Maceration of about 2 weeks on the skins. Aging for about 15 months in third and fourth-passage barriques and in terracotta amphorae, with spontaneous malolactic fermentation. Racking into steel before bottling. Minimum 3 months of aging in bottle. |

The nose is territorial and precise: red fruits, cherry, sour cherry, violet, with savory and mineral hints integrated with fresh spices and officinal herbs. |
