Spontaneous alcoholic fermentation with indigenous yeasts in open vats without temperature control, with daily manual pump-overs and punch-downs. Malolactic fermentation in truncated conical French oak vats, also without thermal control. Aging in used barriques followed by a long rest in the bottle. |
