Devera Passito 2015 Saccomani
Devera is Saccomani's rarest and quietest wine: a passito made from 100% Verdea, a white grape variety of ancient Lombard-Piacenza origins, historically cultivated as a table grape and here recovered and transformed into something completely different. The bunches are harvested in September and left to dry slowly for four months in wooden crates, until January, when the concentration of sugars, aromas, and complexity has reached its peak. Pressing takes place with a vertical wooden press, as was done in the past, to extract the must with the utmost delicacy. Then begins the long spontaneous fermentation with indigenous yeasts only, followed by seven years of aging in oak caratelli — the small 50-liter barrels of the Emilian tradition — which build depth, complexity, and that slow, controlled oxidation that transforms a sweet wine into something profound and unrepeatable. No added sulfites, hand-bottled in 0.35 l format: an absolute rarity, produced in very few bottles.

The nose is intense and complex: dried fruit, dried apricot, fig, chestnut honey, spicy notes, and a slight noble oxidation that adds depth. |

On the palate, it's sweet but not cloying: the long fermentation and aging in small barrels balance the sweetness with acidity and structure, leading to a long, persistent, and warm finish. A meditation wine, to be sipped slowly. |
