Cuvée della Terra - Metodo Classico Blanc de Noir Pas Dosé Chioccioli Altadonna

A classic method from 100% Sangiovese, vinified as a white wine in the hills of Gaiole in Chianti. The Cuvée della Terra is the most unexpected and courageous choice of Niccolò Chioccioli Altadonna: to take the iconic grape variety of Chianti Classico, gently press it without extracting its color, spontaneously ferment it in Impruneta terracotta amphorae with its indigenous yeasts, and then leave it for over three years of aging on its lees in the bottle. The result is a sparkling wine that brings the entire clayey terroir of Gaiole to the glass, with a minerality and savoriness that no white grape variety could have delivered in the same way. The most original technical choice is the tirage with the must from the following harvest: the yeasts that give life to the second fermentation in the bottle do not come from selected cultures but from the Sangiovese vintage of the following year, creating a biological link between two consecutive harvests. The land speaks through two seasons together. Zero dosage, because nothing should alter what Chianti has to say.

Vinificazione

Gentle whole-bunch pressing. Cold decantation of the must, then spontaneous fermentation in terracotta amphorae with indigenous yeasts for about 3 months. Tirage with must from the following vintage, for a completely natural secondary fermentation. Aged on lees for 40 months. Disgorgement dégorgement à la glace, with no added dosage liqueur. Pas Dosé.

Profumo

The nose is elegant and fragrant: white flowers, fresh bread, citrus, with a precise earthy mineral note emerging.

Gusto

On the palate, it is crisp, savory, and long, with fine and creamy bubbles, vibrant acidity, and a clean and persistent finish with a hint of almond. A sparkling wine that surprises with its depth and territorial character.

Abbinamento

A distinctive aperitif, raw seafood, tuna tartare, fried zucchini flowers, crostini with lard and honey, fresh Tuscan cheeses. Excellent throughout the meal with light dishes.
