Chiar'otto is Daniele and Chiara Delaini's answer to the question of what a Bardolino rosé can be when taken seriously. The name carries a family story: "Chiara," the soul of the company alongside Daniele, and "Otto," the June day their daughter Anna was born. But it is the wine, even more than the name, that tells an unusual story: Chiar'otto was the first Bardolino rosé fermented and aged in wood, a choice that changed the way Chiaretto was understood in this denomination. The grapes come from six parcels planted in 1966, gathered in a single block on the hillside overlooking the town of Bardolino, cultivated in Veronese pergola on morainic soils at 165 meters above lake level. The grapes are brought to the cellar and left to macerate overnight in concrete vats, then gently pressed. Spontaneous fermentation with indigenous yeasts, without temperature control. Aged in used wooden barrels for several months. Racking follows lunar cycles. |
