The Côtes du Jura Chardonnay Savagnin represents the most typical and identifying soul of Sylvain Jacquot's work. This traditional blend combines the roundness of Chardonnay with the mineral tension and complexity of Savagnin, creating a white wine of great balance and elegance. The vines, with an average age of about fifty years, are located in Cramans and the surrounding area of Arbois and are cultivated manually, without synthetic chemicals or invasive mechanization. In the cellar, Sylvain works with spontaneous fermentations, no fining or filtration, and minimal sulfur dioxide, choosing the ouillé style, which preserves freshness and vitality. The result is a wine that embodies the purity of the Jura, with its unmistakable mineral imprint.
