Carat Venezia Giulia IGT 2021 Bressan

Carat is the blend that the old farmers of Collio used to plant out of necessity, and which Fulvio Bressan has transformed into a philosophy: eight rows of Friulano, one of Ribolla Gialla, one of Malvasia Istriana, a recipe handed down for generations in the sandy marl hills between Farra d'Isonzo and the Slovenian border. For Bressan, the ninth generation of master vintners since 1726, the grapes are hand-picked slightly overripe and left to ferment spontaneously on the skins for about four weeks, with nothing added, following the family credo: spontaneous fermentations, long aging in old wood, no filtration, no shortcuts. The wine then matures in oak barrels for about three years before being bottled. The result is a macerated white wine of great structure, with the typical almond notes of Friulano, the freshness of Malvasia, and the complexity of Ribolla.

Vinificazione

Traditional Friulian blend of Friulano, Malvasia Istriana and Ribolla Gialla from vines planted in 1990 on marl-sandstone soils of Collio. Manual harvest with slight over-ripening. Destemming and spontaneous fermentation with indigenous yeasts on the skins for about 4 weeks. Aged for about 3 years in oak barrels on its lees. Bottled without filtration.

Profumo

Articulated and intense nose of apricot, peach, melon, orange peel, a note of acacia honey and almond, with nuances of sweet spices. Complex and layered profile of a great macerated white.

Gusto

Broad and soft on the palate, with great structure, light tannins, and the mineral salinity that is Bressan's signature. Long, almond-like persistence, with a refined finish. An orange wine with the soul of a light red.

Structured risottos, pasta with white fish sauces, baked fish with aromatic herbs, white meats, medium-aged cheeses, spicy Asian cuisine.
