Crushing and destemming, spontaneous fermentation in stainless steel containers using a pied de cuve, and maceration on the skins for 20-30 days. Aging in large oak barrels for 12 months, in stainless steel for another 12 months, and finally in the bottle for at least 6 months. |

Very aromatic, with intense fruit reminiscent of blackberry, currant and black fig. The berries are combined with hints of coffee, carob and black pepper, which give the olfactory profile a decidedly Mediterranean character. |

On the palate, it is soft and warm, with fine tannins and freshness that makes it easy to drink. Very long and persistent. |
