Some forgotten grape varieties have been replanted in the last thirty years by Roland Piollot's father who, with this legacy and with the sensitivity of someone who truly loves nature and tradition, produces clean, precise and mineral champagnes. The vineyards look like gardens and are worked manually, with the help of animals and treated with natural fertilizers; indigenous yeasts are used for winemaking. The recent non-dosed monovarietals are extraordinary, among which Colas Robin, a pinot blanc of rare elegance, and Me Petit, a meunier worked only in wood, an example of complexity and refinement.
