Billecart-Salmon
Founded in 1818 in Mareuil-sur-Aÿ by the union of Nicolas François Billecart and Elisabeth Salmon, Billecart-Salmon is one of the few Champagne houses that remains independent and family-owned. From the outset, the family's goal has been to produce wines of great finesse, balance, and expressive purity. Nicolas' brother-in-law, Louis Salmon, a wine enthusiast, made a decisive contribution to the technical development of the winery.
Today, the seventh generation, led by Mathieu Roland-Billecart, continues this tradition with a constant eye on innovation. The house owns about 100 hectares of vineyards, cultivated mainly in the most suitable crus of the Montagne de Reims, the Côte des Blancs, and the Vallée de la Marne, supplemented by selected growers.
Winemaking is carried out with great attention to freshness and elegance: low-temperature fermentations, the use of wood for some cuvées, and long aging on the lees in the historic chalk cellars. Among the most representative labels are the Brut Réserve, the famous Rosé, and the vintage cuvées such as Nicolas-François and Elisabeth. Billecart-Salmon is today synonymous with refined, precise, and uncompromising Champagne.
