Les Varrons Long Élevage Chardonnay 2018 Domaine Labet

Les Varrons Cuvée 2 is the long-aged version of Domaine Labet's most structured single-vineyard cuvée: almost five years in barrels and enameled vats before bottling, from vines over 70 years old from ancient massal selection planted on decalcified clay over Bajocian limestone. Harvested on September 13, 2018 — a dense and concentrated vintage in the Jura — followed by a long and spontaneous fermentation and then an aging process that spanned seasons, lunar cycles, and all the time needed for the wine to find its balance: 24 months in 500-liter barrels, then 33 months in enameled vats, for a total of 57 months. The style is ouillé — barrels topped up, no oxidation, the opposite of traditional Vin Jaune — according to the Burgundian approach that the Labet family first introduced in Sud-Revermont, revealing to the world the depth of a terroir that had remained in the shadows for decades.

The front label is the same as the non-Long Élevage version; the back label changes to include all information on grape origin and winemaking.

Vinificazione

Manual harvest on 13 September 2018. Direct pressing. Long spontaneous fermentation without the addition of any inputs, selected yeasts, or correctives. Total aging of 57 months: first 24 months in 500-liter barrels, then 33 months in enameled tanks, ouillé style with periodic topping up. Bottled on 18 August 2023. Total SO2 18 mg/l, unfined and unfiltered.

Profumo

The nose is complex and layered: ripe citrus, quince, dried fruit, notes of wax and honey, deep chalky minerality. It requires decanting and time in the glass to fully open up.

Gusto

The palate is powerful, taut, and extremely long: precise and sustained acidity despite the significant alcohol content, dense body, compact citrus fruit mid-palate, with an interminable, saline finish.

Filet mignon with foie gras, veal medallions, rabbit chasseur, aged comté, époisses, mont d'or, elaborate dishes with white truffle, porcini mushrooms.
