Chablis AOC 2024 Domaine de la Cadette
When the Montanet family of Vézelay added a Chablis to the La Soeur Cadette range, they did so with the pride of someone who grew up just a few kilometers from Burgundy's most famous white appellation: the grapes come from a thirty-five-year-old certified organic parcel, south-east facing, on typical clay-limestone soils of the area. Valentin Montanet vinifies it in the Chablis tradition, with spontaneous fermentation at low temperatures for about three and a half weeks, full malolactic fermentation, and ten months of aging on its lees in stainless steel to preserve the tension and minerality that define Chablis. No barriques, no new wood, no forcing: just steel, natural yeasts, and limestone. The result is a Chablis of great frankness, with the tonicity and minerality expected from the appellation, at a price that is almost impossible to find for a natural organic Chablis.
