Bourgogne Rouge L'Ermitage 2023 Domaine de la Cadette

L'Ermitage is the red Burgundy with which La Soeur Cadette does something rare and courageous: blending Pinot Noir with César, an almost forgotten grape variety that the Romans brought to northern Burgundy during the conquest of Gaul and which today survives in very few plots in the Yonne. The approximately thirty-year-old vines grow on clay-silt soils over gray marl with a south-facing exposure, in the Vézelay area. Valentin Montanet works with whole or destemmed bunches depending on the vintage, with spontaneous fermentation from indigenous yeasts, manual punch-downs, and an aging of ten months in fûts before bottling without fining or filtration. The César gives the Pinot Noir extra structure and depth, a sort of backbone that allows it to age better than the basic Bourgogne Rouge. The result is an elegant and fruity red with more structure and complexity, a beautiful Burgundy with a Roman secret in its blend.

Vinificazione

Pinot Noir 85% and César 15% from approximately 30-year-old vines grown on clay-loam soils over grey marl with a southern exposure, in the Vézelay area. Manual harvest with selection in the vineyard. Whole clusters or destemmed depending on the vintage. Spontaneous fermentation with indigenous yeasts. Manual punch-downs. Blending of free-run and press juices. Aged for 10 months in fûts. Bottling without fining or filtration, with a small addition of sulfites.

Profumo

Elegant and layered nose of ripe cherry, raspberry, violet, a hint of earth and sweet spices, with a darker and deeper nuance compared to the basic Bourgogne Rouge, a signature of the César in the blend.

Gusto

More structured and full-bodied than the basic Bourgogne Rouge, with present but refined tannins, vibrant acidity, and mature fruit that evolves into a spicy and persistent finish. Elegant and gastronomic drinkability.
