Bourgogne Blanc 2024 Domaine de la Cadette

La Soeur Cadette's Bourgogne Blanc is a négociant wine that Valentin Montanet produces from Chardonnay grapes purchased from a trusted grower in the Mâconnais, from the communes of Uchizy and Péronne, where the vines are approximately fifty-five years old and grow on stony clay and limestone with south and southwest exposure. Valentin vinifies it with the same philosophy as the family estate in Vézelay: spontaneous fermentation with indigenous yeasts, full malolactic fermentation, aging on its lees in stainless steel, no chaptalization, no fining, and no filtration. The result is a white Burgundy of almost Chablisian precision, with the generous fruit of Mâconnais Chardonnay balanced by chalky minerality and a lively acidity that makes it Burgundian to the core.

Vinificazione

100% Chardonnay from 55-year-old vines in the communes of Uchizy and Péronne in Mâconnais (Saône-et-Loire), on stony clay and limestone with south and southwest exposure. Négoce. Spontaneous fermentation with indigenous yeasts. Full malolactic fermentation. Aged on lees in stainless steel. No chaptalization, no fining, no filtration. Minimal addition of sulfites.

Profumo

Classic white Burgundy nose: Golden apple, pear, fresh citrus, a hint of white flowers, and limestone. Clean, precise, and mineral profile.

Gusto

Dry and fresh on the palate, with medium body, sharp acidity, and a chalky minerality reminiscent of Chablis. The finish is savory and persistent, with that white-fleshed fruit aftertaste that is the signature of unwooded Burgundian Chardonnays.
