La Soeur Cadette's Bourgogne Blanc is a négociant wine that Valentin Montanet produces from Chardonnay grapes purchased from a trusted grower in the Mâconnais, from the communes of Uchizy and Péronne, where the vines are approximately fifty-five years old and grow on stony clay and limestone with south and southwest exposure. Valentin vinifies it with the same philosophy as the family estate in Vézelay: spontaneous fermentation with indigenous yeasts, full malolactic fermentation, aging on its lees in stainless steel, no chaptalization, no fining, and no filtration. The result is a white Burgundy of almost Chablisian precision, with the generous fruit of Mâconnais Chardonnay balanced by chalky minerality and a lively acidity that makes it Burgundian to the core.
