Vinificazione |
The best bunches are selected and brought to a ventilated room for drying. The grapes lose at least 50% of their original weight, concentrating sugars, aromatic compounds, and noble tannins. In February, a soft pressing is carried out, and fermentation begins with a pied de cuve and a long maceration. The wine ages for 12 months in tonneaux and large oak barrels, for another 12 months in concrete tanks, and finally rests for 8 months in the bottle. |
