La Palazzetta's Brunello di Montalcino is produced in Castelnuovo dell'Abate, the southeasternmost corner of the appellation, where the Tyrrhenian sun and the cool winds of Mount Amiata, an ancient volcano and sacred mountain to the Etruscans, meet over a stony galestro soil. The Fanti family cultivates its twenty hectares of vineyards with certified organic practices and processes them according to the appellation's oldest tradition: spontaneous fermentation with indigenous yeasts in open vats for eighteen to twenty-one days, natural malolactic fermentation, followed by three years of aging in large thirty and fifty-hectoliter oak barrels, never a barrique, never a shortcut. The result is a Brunello classic in structure but direct on the palate, with significant tannins and a freshness that balances the typical power of the Castelnuovo dell'Abate area. A Brunello built to age for twenty years in the cellar without haste.
