The approximately thirty-year-old vines grow on \u003cstrong\u003eclay-silt soils over gray marl\u003c\/strong\u003e with a south-facing exposure, in the Vézelay area. \u003cstrong\u003eValentin Montanet\u003c\/strong\u003e works with whole or destemmed bunches depending on the vintage, with spontaneous fermentation from indigenous yeasts, manual punch-downs, and an aging of \u003cstrong\u003eten months in fûts\u003c\/strong\u003e before bottling without fining or filtration. The César gives the Pinot Noir extra structure and depth, a sort of backbone that allows it to age better than the basic Bourgogne Rouge.
